I am always on the look out for new clean eating recipes to try. I stumbled across this one in a magazine. I thought it sounded good, a different way to serve up sweet potato. I tweaked the recipe a little to make it more suitable to our tastes and here you have it.
Ingredients:::
Handful of broccoli
2 large sweet potatoes, peeled and grated
4 Spring Onions, finely sliced
Handful of coriander leaves, roughly chopped
Handful of sweetcorn
Handful of sweetcorn
1 egg, lightly beaten
About 2 tbsp plain flour, plus extra for dusting.
3-4 tbsp of coconut oil
2 garlic cloves, peeled, finely slice
Pinch of chilli flakes (optional)
Streaky bacon
Method:::
1. Add broccoli to a pan of boiling, salted water and cook for about 10 mins, until just tender. Drain well and set aside. Meanwhile, add potatoes, spring onions and coriander to a large bowl and season. Slowly add the egg and flour, and stir until it has a thick dropping consistency. Put it in fridge.
2. Add your bacon to a warmed frying pan. Cook your bacon to your liking. Once the bacon is cooked transfer it to a plate and keep warm. Add your broccoli to the same pan. Cook for 1 min, add the garlic and then cook for a few more mins. Sprinkle with chilli flakes, if using, toss around the pan then transfer to plate and keep warm.
3. In a different pan heat a little oil. With floured hands scoop out a ball of potato mixture, add to the pan (a few at a time) and flatten with a spatula. Cook for 5-6 mins, then turn and cook the underside. Continue cooking until all your mixture is used up.Serve the Rosti with broccoli, and a few rashers of bacon.

5th April 2016 at 9:05 PMIt is quite yummy. We also make a sweet potatoes hash which is similar to this but you make it in a pan and crack eggs into the wells. We like to have it covered in cheese. It's a great brunch dish and Rosalie loves it x
