We are back from holiday, I have finally conquered the washing mountain and things are slowly returning to normal.
Nick is away this week with work so it is just Rosalie and I for dinner this week. This week’s meal plan is full of my favourite comfort food but healthier versions of them.
Our dinner meal plan for this week is:::
Monday – Creamy chicken, bacon, and avocardo Pasta with sweetcorn and spinach
Tuesday – Fish Pie
Wednesday – Nick’s Mum’s for dinner
Thursday – Sausage and Mash
Friday – Steak and homemade Chips
Saturday – Dinner at Grandma’s House
Sunday – Roast

It was one of my throw whatever I have left over in the fridge pasta's! 🙂 Basically I boil the pasta, add coconut oil to another pan and brown the chicken and bacon whilst the pasta cooks. When the pasta is cooked I drain it but reserve some of the cooking water. I add that along with a spoonful of cream cheese to my cooked chicken and bacon. I throw in the sweetcorn and spinach and cook until the spinach has wilted. I had an avocado that needed using up so chopped it up an blitzed it in the nutribullet before adding it to the sauce as well with some seasoning. It was yummy! Do let me know if you recreate it.
