So I’m going to let you in on a family secret here…
We eat ALOT of these pancakes!
They taste soooo good, I even prefer them to normal pancakes now, AND they are good for you! I am so thankful I discovered this recipe, it has changed our breakfast eating habits forever. I’m going to share the recipe with you today, honestly, it’ll change your life!
INGREDIENTS:::
Per Person
1 x Banana
2 x Eggs
1 tbs Porridge Oats
1 Shake of Cinnamon
Coconut oil for frying
If your making pancakes for more than one person just up the ingredients accordingly. For 2 use 2 bananas, 4 eggs and so on.
If I am making these pancakes for Nick I also add a scoop of vanilla protein powder but this is optional.
METHOD:::
Peel and chop your Bananas.
Add all your ingredients to a food processor.
Whizz until your mixture is all combined. You will then need to put your mixture in the fridge for 10 minutes for the batter to thicken slightly, this will make your pancakes easier to handle in the pan. If you are adding protein powder to your pancakes you can skip this step and start cooking your pancakes straight away.
Heat your pan and add coconut oil to the pan and allow it to melt.
Ladle your mixture into your pan. I find half a ladle of mixture makes a good size pancake but you can make them bigger or smaller as you like.
