Nick is being super healthy at the moment. This made valentines day gifting particularly difficult. Everyone gets chocolates on valentines day! With that out of the question, I started to scour pinterest and for some healthy chocolates.
I stumbled upon a recipe for these bad boys… Deliciously Ella ultimate energy bites.
They look the part and taste absolutely gorgeous too. They are so so easy to make and are even toddler friendly! They are something that Rosalie and I can make together. They do use a food processor though and she doesn’t like those, but once the mixture was made Rosalie loved rolling them up into little balls and popping them in daddy’s chocolate box.
I made a few amendments to the recipe, substituting a few ingredients that we didn’t have for items that were in the cupboard.
This mixture makes 15 – 20 balls.
Ingredients
– 1 cup of de-stoned dates
– ¾ cup of almonds
– ¾ cup of walnuts
– 2 tablespoons of chia seeds
– 2 tablespoons of ground flax seed
– 1 tablespoon of coconut oil
– 1 tablespoon of protein powder
– 1 tablespoon of cocoa powder
Instructions
You simply start by placing the almonds, walnuts, ground flax seed and chia seeds in your food processor, and then whiz them up until a flour forms and your nuts are chopped.
You then add the remaining ingredients and whiz again until a dough forms.
You and your toddler can then start to roll your mixture into balls. Place in your container and store in the fridge.
We used an old Ferrero rocher box left over from Christmas to store our chocolates in so they would be presented nicely. I wrapped the box up with a pretty ribbon too to make them look extra special.
