I have already shared with you the recipe for the ONLY type of pancakes we eat in our house.
Honestly, these healthy pancakes are such a game changer. You simply must give them a try. The pancakes are light, fluffy and super delicious, whilst being good for you too, what’s not to love?
With pancake day just around the corner I decided to share with you our favourite healthy pancake toppings.
Caramelised Banana Pancakes with Maple Syrup and roasted hazelnuts
I N G R E D I E N T S
I banana
1 tbsp of Maple syrup
1 tbsp of roasted hazelnuts
I N S T R U C T I O N S
- Chop the banana into 2 cm slices on the diagonal.
- Fry the banana slices in the frying pan that you cooked your pancakes in. Watch your bananas as they cook as they really don’t take long at all to caramelise.
- Top your pancakes with the caramelised banana slices, a drizzle of maple syrup and a sprinkling of hazelnuts.
Mango Pancakes with Coconut and Chia
I N G R E D I E N T S
I/2 a mango sliced
2 tbsp of coconut yogurt
1 tbsp of coconut flakes
1 tbsp of Chia Seeds
I N S T R U C T I O N S
- Prepare your mango and chop into slices
- Spoon the coconut yogurt on top of your pancake stack.
- Sprinkle your pancakes with the coconut flakes and chia seeds.
Blueberry Pancakes with bacon and honey
I N G R E D I E N T S
I handful of blueberries
1 tbsp of honey
2 slices of smoked streaky bacon
I N S T R U C T I O N S
- Fry your bacon in a griddle pan as your pancakes cook. When your bacon is nice and crispy remove from the pan and put to the side on sheet of kitchen roll to soak up any excess fat.
- Pour your blueberries onto your pancake stack.
- Drizzle the pancakes and blueberries with honey.
- Arrange your crispy bacon on top.
